So I have this little bottle for shaking salad dressings in, and it comes with a few different recipes around the side. One of them is for a creamy raspberry tarragon vinaigrette. I was serving a fairly spicy dish yesterday, so I thought the creamy dressing would go well. And did it ever! Pat said he preferred this one over the first version, but for me, it would depend on what I'm eating with it.
Creamy Tarragon Raspberry Vinaigrette
Ingredients:
1/3 cup mayo
1/3 cup raspberry vinegar
1 tsp Dijon mustard
1/2 tsp tarragon
1 tsp sugar (or more if you prefer)
salt & pepper to taste
Method:
1. Mix all ingredients. Serve over a green salad.
My salad had strawberries (a must), tomatoes (not my favourite flavour combination with the raspberries, but good with the creamy dressing) and onion... I would definitely have preferred to add in leek (though the onion is fine) and radish, but we work with what we have!
Here's the dish I served with the salad - chicken cooked in beer and a spicy lemon salsa. SO yummy! The lemon salsa was homemade by the same man who made the raspberry vinegar - I love our little farmer's market!
